1 inch piece fresh ginger
2 Tbsp natural sugar, poured into a small dish
2 oz. Pineapple juice
1 Tbsp fresh lime juice, or half of a lime
2 scoops Haagen Dazs mango sorbet
4 ounces ginger beer
Garnish: lime, edible flowers
Prepare your glass. Cut skin off of ginger and run the piece around the rim to wet the edge. Dip lightly in sugar. Set aside.
Fill a shaker with ice and add the pineapple and lime juices. Shake vigorously and strain into glass.
Add 2 scoops of Haagen Dazs mango sorbet into the glass.
Top with Ginger beer.
Allow sorbet to soften a few minutes at room temperature to make it easier to scoop.
